Ingredients
  

  • 240 g flour (2cups
  • 300 g granulated sugar (1 1/2 cups
  • 4 medium eggs
  • 240 ml olive oil (1cup
  • 300 ml milk
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • For topping
  • 1 tbsp granulated sugar

  • Directions
  • Preheat oven to 350°F
  • In a clean bowl add sieve flour baking powder, baking soda, and salt mix and set it aside
  • In another bowl add sugar and eggs whisk on a high speed until is light and fluffy
  • Slowly add the olive oil why the mixer is still running
  • add lemon juice and the zest
  • Slowly add the milk and add the the dry ingredients cup by cup mix gently
  • Do Not Over Mix
  • Prepare 2×6inch pan rub pan with some olive oil and dust with flour
  • Pour the cake batter into the 2 pan
  • Topped with the 1 tbsp of the sugar
  • Bake @ 350°F for 30-35 minutes until stewer comes out clean
  • Let the cake cool before removing it from the pan

  • To easily remove your baked cake from its pan, use a knife and go along the edges between the wall of the pan and the edge of your pastry.
  • To ensure the cake stays fresh, store it in a cool and dry place and cover it with either plastic wrap or aluminum foil.
