Fluffy American Pancakes

Pancakes are a weekend breakfast staple. Add all your favourite extras to the batter and pile them on top of each other for a delicious meal that tastes as good first thing in the morning as it does when you’re tired at the end of the day. Drizzle with maple syrup for an extra luxurious treat.

American pancakes are delicious breakfast food that is made from batter and cooked on a griddle or on a nonstick pan. They have been around for centuries, but they have evolved to become what we know them as now.

Pancakes are a great breakfast option because they can be customized to suit your tastes. You could make them with a variety of different toppings like toasted coconut flakes, crushed peanuts, chocolate chips, blueberries, peanut butter, bacon, or banana.

Warm, homemade pancakes in the morning will make all your Monday morning blues go away. Whenever you can’t seem to get out of bed because of the stress on Sunday night, just pile up some fluffy-yet-flat sweet breakfast food and it’ll make you forget about everything else.

I prefer all of the different types of pancakes, but my favourites are American-style pancakes as they are crispy on the outside and fluffy inside.

This easy recipe doesn’t require many ingredients that you’re probably already keeping on hand in your kitchen, and the ones this does require are basic staples like flour, baking powder, salt, sugar, milk, vanilla extract, eggs and vegetables oil

With these fluffy American pancakes, you won't need to spend a lot of time making breakfast on the weekends. They're easy to make and taste great!

Ingredients
  

  • 250 g (1 cup) lour
  • 2 tsp baking powder
  • 2.8 g salt
  • 25 g caster sugar
  • 1 Large egg
  • 28 g (2 tbsp ) melted butter or vegetable/canola oil
  • 1 tsp vanilla extract (ptional)
  • (250ml cup (1 cup) whole milk

Instructions
 

  • Mix the flour, salt and baking powder in a clean large bowl. 
  • Crack eggs into a clean separate bowl, pour in the sugar, oil, vanilla extract and milk, and whisk well until the sugar has dissolved. Add this mixture to the dry ingredients mix until you have a smooth batter. The batter should be quite thick. Do not overmix.
  • Place a non-stick frying pan on medium heat. it's too hot so turn it down a bit. A medium heat is perfect. Smear the pan with a little butter or oil and drop in spoonfuls of the mixture or you can 1/4 cup to scoop the batter When bubbles appear on the surface, gently flip over and cook for two or three minutes.
  • Keep the pancakes warm by wrapping them in a clean tea towel on a cooling rack.
  • Repeat until all is finished.
  • Serve with some toasted coconut flakes and drizzle with maple syrup. For extra sweet dust with some icing sugar.

Notes

If you prefer, you can use buttermilk instead of milk.
 
Pancakes are best eaten on the same day they’re made.
It can also be made in a blender by placing all the ingredients in a blender and blending them into a batter
