Mexican Salad with Greek Yogurt Lime Ranch

This Mexican side dish is the perfect addition to any summer party or potluck, topped off with an irresistible Greek yogurt ranch dressing! It can be made in advance and is both light and delicious.

Ingredients
  

  • 300 g Fresh corn
  • 150 g Smoked markerel boneless (Optional)
  • 50 g Tiger nut
  • 26 g Red kidney beans
  • 10 g Onion (Chopped)
  • 50 g Green pepper
  • 40 g Yellow Bell pepper
  • 50 g Tomatoes (Choped)
  • 6 g Green chili (Chopped)

Dressing

  • 50 g Greek yogurt
  • 20 g Mayonnise
  • 1 tsp Cayenne pepper
  • 5 g Lime juice
  • ½ tsp Oregano
  • ½ tsp Cumin
  • ¼ tsp Cardamon
  • ½ tsp Salt
  • Grated parmesan chesse for garnishing (Optional)

Instructions
 

  • In a nonstick pan, add 1 tbsp of butter. Roast the corn for about 5-6 minutes, stirring occasionally, until the corn looks charred and smells really good. Keep the corn aside and let it cool completely before adding other vegetables.
  • Rinse the kidney beans with cool water and place them in a colander to drain out the water.
  • Mix all the ingredients for the dressing and keep it aside.
  • For the salad, in a large bowl, add cooled roasted corn, chopped tomatoes, yellow bell pepper, green pepper, tiger nut, chili pepper, onion, and smoked fish.
  • Mix the salad with desired dressing, then toss it together gently.
  • Garnish with some grated parmasan cheese
  • Enjoy.

Notes

Here’s a few tips to make a perfect Mexican Salad:
  • The key to a great chopped salad is to dice all the ingredients into a uniform size. Large vegetables may overwhelm the bite-sized ones, so it’s important they are evenly diced!
  • If you’re serving this to guests, I recommend making the individual components as far in advance as possible so that you can assemble it just before serving.
  • This dressing needs to be added just before serving.
